I remember when Amir and I lived just one town away. It was much easier to hang out over food, inviting friends to either one of our apartments–usually his–for food and cocktails. Peach and Blueberry Almond Pie – Serves 6 to 8 1 double pie crust, thawed or your favorite pie crust recipe 8 ounces almond paste 16 ounces frozen blueberries, thawed and drained 16 ounces frozen peaches, thawed and drained 2 teaspoons fresh ginger, minced 3/4 cup sugar 2 teaspoons vanilla Zest and juice of 1 medium lemon 1 tablespoon cornstarch 1 tablespoon almond flour Pinch of fine sea salt 1 egg, whisked 1 teaspoon almond milk or regular milk 1. On a floured surface, roll out both pie crusts to fit a 9″ pie dish. Spray the dish with cooking spray, then set one of the crusts inside. Roll out the almond paste to fit in the bottom of the dish. Carefully press the almond paste into the bottom of the dish to cover the crust. Set aside along with the top crust. 2. In a medium bowl, toss the remaining ingredients together until coated. Pour into the pie dish and cover with the top crust. Press the edges together with the tines of a fork or a decorative fold. Chill the pie in the fridge until the dough is cold and hard, approximately 20-30 minutes. 3. Once ready to bake, whisk the egg and almond milk together and brush over the top of the pie. Slide the pie into a preheated oven at 400 degrees for 40-45 minutes or until golden brown. Allow to cool slightly before eating. Click HERE for the printable recipe.
