Roasted Peppers, Spinach and Feta Pizza

Thanksgiving is so full of cooking that by the time the weekend comes around, the idea of going back into the kitchen may not be at the top of the list. We admit that no matter how much we love to cook, we enjoy our lazy time as much as you. Pizza is so fast and easy to whip up. We’ll show you just how fast and how easy.

Pizza is whatever you make it. We decided to make this one vegetarian, but it would’ve been super fab with a little Italian sausage sprinkled on top. Or a few pieces of pancetta. Even sweetening it up with a drizzle of balsamic glaze. Use your magic and make it your own!

Roasted Peppers, Spinach and Feta Pizza – Serves 1 to 2
1 Flatout flatbread*
1/2 tomato, sliced
1/2 cup orange pepper, sliced
1/2 cup red pepper, sliced
1/4 cup red onion, sliced
2 cloves of garlic, minced
1 1/2 tablespoons olive oil, separated
1 cup spinach leaves, raw and torn
1/2 cup feta cheese

1. Toss peppers, tomatoes, onions and garlic with olive oil and spread on a baking sheet. Roast in a preheated oven at 400 degrees for 20 minutes.

2. Place flatbread on baking sheet. Layer peppers, tomatoes, onions and spinach on flatbread. Sprinkle with feta. Bake for 10 minutes at 400 degrees.

3. Turn oven to broil and cook on low for 2-3 minutes or until flatbread edges begin to brown.

*Using a pre-made pizza crust or even pita bread will work just fine for the crust.
