Chorizo and Potato Tacos, Roasted Tomato and Garlic Salsa
Vegetarian • Tags: roasted garlic, salsa, soyrizo, tacos, tomatoes, vegan
We’ve recently been roasting garlic a lot, mostly for pizza, although it’s great in a number of dishes. Roasting brings out such a natural sweetness that even someone who claims not to like garlic could be persuaded. Once roasted, you can literally eat it right out of the peel, popping the fragrant clove right on your tongue. Or you could swipe it on a bit of bread or a cracker. This time, though, the roasted garlic would play a prime role in a blended salsa for a batch of tacos. Along with the garlic, a bunch of tomatoes also found themselves slow roasting in the oven. The aroma of roasting garlic and tomatoes filled the kitchen, exciting all for what was to come. The final meal was worth the wait.

Black Bean and Corn Tostadas

It’s October, and we can officially say that the summer sun is behind us. Perhaps. You see, here in Los Angeles, it was up to 113 degrees into the last week of September. While the rest of you had already put away bathing suits and pulled out jackets, we were standing in front of air conditioners set to full blast. There were power outages across town. Popsicles were eaten with wild abandon. It was, without a doubt, stiflingly hot. If you do not live in Southern California, it may be difficult to understand, but it is true! It’s difficult to heat up an oven or stand over a bubbling pot when the temperatures are rising at such rates. In less than a week, the mercury-filled thermometers have dropped at least 20-30 degrees, and now October’s serving up chilly, gray, rainy days. It looks like summer is gone, but who knows. The weather monster does like to pull tricks on us. While we wait for him to let us know his next move, check out one of the last summer perfect recipes in our repertoire.

Many of you noticed the architectural wonder that was part of our May Guest Test Kitchen. The dish was an ode to the flavors of the Caribbean. Although the meal was created in a town in North Carolina, everyone who looked at the photo seemed to have a virtual taste on their tongue of the coconut, lime and spice that sat on the plate. Cooking can indeed take you places, and you don’t have to go any farther than your local market if you’re ready for the trip. Nothing can beat a real flight out of town and into a new world, but sometimes you have to take what you can get. Well, it’s time for another trip to the Caribbean, and this time, we will be your tour guides.

Pomegranate Kiwi Granita Cocktails, Grilled Salmon with Orange Avocado Salsa and Pomegranate Glaze, Apple and Pomegranate Galette

We were late to the disco with this one, but better late than never. We recently discovered the grandeur that is pomegranate juice. Mind you, we’ve had our share of pomtinis and pomagaritas, but there’s more to this sweet, tart liquid than mixing it into a cocktail. Well, we fully support mixing it into a cocktail, so maybe we should further explain. What we mean is that the pomegranate is totally and truly delicious, and so is its juice. We received a lovely box of samples from Molly at Pom Wonderful, and in an overzealous act of experimentation, we took to the kitchen to see what we could do with it. What started as “Let’s make pom glazed salmon” turned into a full course meal with a cold drink to top it off. Sometimes we get so excited about the possibilities that we end up testing them all. That being said, an afternoon of phe-pom-enon was born! Oh, and did we mention we made a lightbox too? Truly pom-tastic.
