Caramelized Peach and Bacon Pasta

At our cocktail party after the beach seafood boil a couple weeks ago, we wanted to have an easy dish to serve up to our guests. You may be wondering how they even had room left in their bellies after an afternoon of crab, shrimp, mussels and lobsters. Well, trust us, there’s always room. Having just received several sample bottles in the mail from Girard’s Salad Dressings, we thought a cold pasta salad would do just the trick. We could prep all of the ingredients individually and just toss them together just before serving. We decided to use the Peach Mimosa Vinaigrette because it was one of the most interesting varieties amongst the group. The dressing is sweet, but not overwhelmingly so, and we thought summertime peaches would pair beautifully with it. From there, everything just fell together in unison.

Mango Peach Cobbler

It’s blazing hot, the sun is shining, shorts are in full effect, and if you’re still in school…well, classes are out. What does this mean? It’s summertime! For us, we know its official once the produce section overflows with fresh peaches. And there just isn’t a better way to celebrate the new season than with a homemade peach cobbler. Like many famous desserts, there are infinite varieties of the peach cobbler depending on your region of origin. We’re all probably familiar with the old fashioned cobbler that uses a flakey, pie dough-like crust with strips of dough to make fancy weaved top designs. Maybe the one you know has a crust made of biscuit-like dough atop bubbling fruit. All of these are excellent for sure, but our favorite breed of cobbler spans from our Southern roots. It’s an insanely easy method—just pour the peaches on top of an easy-to-make batter, bake and witness a cake-like dough form around the peaches, enclosing them with lots of love. Would you agree?
