Chocolate Caramel Cupcakes with Caramel Coffee Glaze
Cakes, Pies & Tarts • Tags: caramel, coffee, cupcake glaze, cupcakes, Frangelico, Vosges chocolate
They say there are a few things that you just need a taste of, and you’re set. No need to OD because a hit or two will get you going. No, we’re not talking about illegal substances. We’re talking about chocolate. Honestly, we can eat chocolate in massive quantities and be just fine. Bouncing off the walls from a sugar high? Whatever. Tooth decay? Bah humbug. Pudgy bellies? Eh. Chocolate is one of those things where you can give us a Hershey bar or quelquechose de Vosges, and we’ll tear it up. We’re not chocolate snobs, although we can take the time to appreciate the taste of a fine chocolate. And then we’ll ask you for another piece. These cupcakes are not made with the world’s finest chocolates. In fact, we called upon our friend Hersey for his cocoa powder and Trader Joe for his dark chocolate bar. No matter, they were good. You can’t fault us for just getting our fix.

White and Dark Chocolate Dipped Shortbread Cookies

Does anyone remember KP & Envyi? We’re not sure why their song popped into our heads, but all the while we were making these shortbread cookies, that was on the brain. Maybe because the hook of that song was so irresistible, just like these cookies. Maybe because we’ve got the light dip and the dark dip on these cookies, just like KP and Envyi! Or perhaps it’s because we felt so crunk as we popped these cookies into our mouths, just like we did growing up in the 90′s. Something about the 90′s, especially 90′s music, just gets us so excited! If we could bottle up the energy of the 90′s hits and sell it…well, perhaps we were beat to the punch by Now That’s What I Call Music, so scratch that. If we could, we would’ve done it! For now, all we can do is eat these cookies to get the same high.

Chocolate Hazelnut Cake with Seven Minute Frosting

We are not as haughty as Marie Antoinette. At least we do not think so. We do like cake though. That is the only connection between the Duo and the bourgeois dauphine de France, and it is a very loose one. We’ve made a good number of cakes and sweets in our tiny corner of Los Scandalous, and this one was yet another attempt to flex the flavorful bicep of a collection of goodies in the pantry. A while back, we bought a big ‘ol Snuggie wearing, friar shaped bottle of Frangelico for a couple of desserts, and it’s been sitting in the cabinet awaiting its next application. When Frangelico shows up to the party, it never disappoints, and here it is again working its magic. If little Marie told us to go eat some cake, we’d ask her to serve a slice of this one.

Chocolate Hazelnut Banana Bread Pudding with Frangelico Coconut Custard and Hazelnut Cream

There’s no witty anecdote behind this post. What we’ve got here is a creation of necessity with the need being a free trip to Chicago…STAT! Many Foodbuzzers know that the deadline is today to submit an entry to win a trip for two to Outstanding in the Field. We love Chicago, we love to cook, there are two of us…it only makes sense that we should give it the old college (*ahem* post-grad) try. The challenge: Use at least one of these ingredients in a recipe–bananas, cashews, cranberries, macadamia nuts, raspberries, almonds, chocolate, coconut or cherries. This is the first time we’ve entered a foodie competition that requires the use of specific ingredients, and it’s safe to say it won’t be the last. Here’s hoping we are winners of course, but in the end, the fun and games of it all is the best part.
