Corn and Basil Soup

A little cream does make things taste good. Things like risotto, alfredo sauce and maybe even a piping hot bowl of soup. Cream adds heft, more body if you will. Yes, cream is a mighty good thing. Sometimes. But sometimes you don’t need it. And that’s when you know you’re getting unadulterated goodness that travels from spoon to mouth. In order to cut out a few calories, you can find easy ways around the cream dilemma. Or maybe calories aren’t your concern. Perhaps you had it on your list, and dangit, you forgot! No matter. There are ways to work around that dang cream, so you still end up with a creamy, satisfying dish.

Elote Salad

A few weeks ago, Amir spent a weekend in Sedona, Arizona. While there, he enjoyed dinner at the Elote Café, which is proudly named after the popular Mexican street snack. Now widely available in the US, elote is simply grilled corn on the cob rightfully glorified with chile spices, lime juice, cheese and mayonnaise. Naturally, Elote Café had its namesake on the menu as an appetizer, but their version featured the corn cut off the cob and served in a small bowl alongside fresh corn tortilla chips. We’ve never seen that before! We made our own version of the traditional street food last summer using a chile lime sauce with crema Mexicana and queso fresco. Amir loved this dish so much, he immediately texted his plan to make a version immediately upon returning to LA. And here it is!

Many of you are getting ready to celebrate Thanksgiving with your friends and family. We are both doing just that on opposite sides of the coast, but this past weekend, we had the chance to eat a pre-Thanksgiving meal with friends here in Los Angeles. One of the things we had to do when we moved to Los Angeles was create a sense of family amongst friends. We’ve both spent different holidays away from our blood relatives, and it’s nice to know that there are people around to be with you when you can’t go home. Enjoy the holiday however you’re spending it. Whether you’re with friends, family or your pet Fido, make it a good one.

Baked Black Beans and Cotija Cheese Dip

The first cotija culinary adventure proved to be so interesting that we went back at it again. This time, we were going for quick, easy and hearty. One of our favorite friends possessing all three traits is the black bean! It’s really versatile–from soups to brownies. Yes, brownies. Just Google it. So after a successful foray with cotija, we figured it’d be a perfect match with black beans. Black beans in a dip formation. There are a lot of black bean dips in the world, but most of them tend to be blended or partially mashed, which was exactly what we didn’t want. It’s more fun to actually see what you’re eating. And so we went with the tried and true layer action. Perfect for chip dipping!
