Leftovers Renewed

Bubble and Squeak is an English dish that is traditionally comprised of last night’s leftovers. Whatever meat and vegetables hanging around after a big meal are mashed together with potatoes and fried to a satisfying crisp. The dish is named for the bubbling and squeaking sounds it makes as all of the ingredients fry in the pan. You’ll commonly see veggies such as cabbage, peas, Brussels sprouts, or carrots in this dish, but as with most things in life (including our favorite recipes), toss in whatever you like. The beauty is that it will work just fine.

We Told You So

Remember the Chocolate Pecan Mint Roll from our February Foodbuzz 24, 24, 24 post?  Well, if you don’t, you should reacquaint yourself!  What’s so great about that cake is that it’s flourless and butterless (who wouldn’t like that?), and it’s insanely versatile.  And when we say versatile, we mean versatile.  You can really do just about anything to it, and it turns out so light and delish every time.  It even surprised us just how easy it is to alter the recipe to whatever flavor, taste, or food combination you want–the possibilities are endless!  Many readers may know that the Duo is comprised of two friends–Chrystal and Amir.  Amir loves bananas!  Chrystal, not so much.  There are aspects of banana based recipes that can still be enjoyable–the soft bread and crunchy nuts of banana bread, the caramelized brown sugar and rum on bananas foster and the creamy pudding of a banana pudding.  When you deconstruct the recipe, it’s the individual flavors that really pop.  It’s guaranteed that even a banana hater could potentially enjoy banana pudding in a cake form for sure. Hence, our desire to make an original creation based just on that idea.

We Could Really Use a Vacation

There’s no witty anecdote behind this post. What we’ve got here is a creation of necessity with the need being a free trip to Chicago…STAT! Many Foodbuzzers know that the deadline is today to submit an entry to win a trip for two to Outstanding in the Field. We love Chicago, we love to cook, there are two of us…it only makes sense that we should give it the old college (*ahem* post-grad) try. The challenge: Use at least one of these ingredients in a recipe–bananas, cashews, cranberries, macadamia nuts, raspberries, almonds, chocolate, coconut or cherries. This is the first time we’ve entered a foodie competition that requires the use of specific ingredients, and it’s safe to say it won’t be the last. Here’s hoping we are winners of course, but in the end, the fun and games of it all is the best part.
