The relationship between a home cook and his or her food processor is sacred. That is why it was a day of mourning when my merely 6 month-old food processor suddenly bit the dust not too long ago. What caused it to stop working one day without warning? Guess we’ll never know why these things happen. Thankfully, though, a new and improved food processor recently entered the picture, and this one even doubles as a blender! Chrystal recently received a new food processor too, and we’ve both been blending up soups, spreads, dips and more. Here’s a fun, Spring green recipe that works perfectly for anyone who wants to initiate a new kitchen tool.
We thought a hummus would be an easy and fun inaugural dish for this newest addition to the kitchen. We left the can of chickpeas on the shelf and instead reached into the freezer for a bag of green peas. Like any hummus, adjust the level of garlic, olive oil, and seasonings to your tastes. You could also toss in some cooked leeks, an avocado, edamame or any variety of roasted vegetables for an added element of flavor or texture. We wanted to keep it simple this time around, so we left out all of those extras. The mint adds a greater breath of freshness to the peas. The finished dish is a beautiful pairing with a variety of foods, or this bright green delight is just as spectacular on its own as a healthy snack. Whether brand new or old, your food processor will be able to tackle this treat with ease.
Mint Pea Hummus – Serves 10
1 pound frozen peas, thawed or freshly shelled and cooked
4-6 cloves garlic, peeled
2 tablespoons tahini
2 tablespoons fresh mint, chopped
1 tablespoon olive oil
Juice of one lime (optional)
Kosher salt and pepper, to taste
Place thawed peas and remaining ingredients in a food processor. Blend into a smooth paste, adding more oil or lime juice to reach desired consistency. Season to taste. Serve with pita bread or your favorite corn tortilla chip.
