Caramelized Pineapples

Summer isn’t quite here yet, but the weather’s very strange right now, so most of us probably feel like we missed half of the spring season. Under these strange circumstances, let’s pretend that we are now well into summer. The hot, hazy days feel great when you end them with a light dessert. Pineapples are great on their own, but they could always use a little something to spice them up. One technique that truly makes the sweet nature of a pineapple sing is the flambé. Dash a bit of liquor over a hot flame, and you’ll have caramelized pineapples for everyone to enjoy.

Such a simple summer dessert. You can do this with peaches as well, but sometimes you’re walking through the grocery store, and you see a pile of fresh pineapples that look and smell irresistible. If that is the case, you should buy one, cut him up and throw him in a bath of butter and brown sugar. Oh, and if you’re feeling adventurous, try the flambé method. That’s right, set a small flame over your stove! A controlled small flame of course, but a fire nonetheless. This recipe features rum, but you can be as creative as you like with your choice of spirit.

Caramelized Pineapples – Serves 6
1 medium pineapple, peeled and cut into 12 rings
3 tablespoons unsalted butter
1/8 cup brown sugar
Pinch of kosher salt, plus more for sprinkling
Dark rum, optional

1. Melt the butter over medium heat in a shallow pan, then add the sugar and salt. Stir a bit to incorporate and allow to meld approximately 1-2 minutes over the heat.

2. Add the pineapple rings and cook, approximately 1-2 minutes per side, or until the edges just begin to darken. If using rum (and a gas stove), pour a couple of splashes into the pan and tip the edge of the pan towards the flame of your stove. Although not hot enough to burn you, warn others before doing so as the flame may be large.

3. Remove the pineapple rings from the pan and serve immediately, either on their own or with cold ice cream, sherbet or sorbet. Sprinkle with a bit of kosher salt if desired.

  1. Oh how I love grilled/flambed pineapple and when you add ice cream, well, it hardly gets better than that!

  6. Great idea with the run and brown sugar. Pineapple is great when it’s warm and sweet and sticky. Coconut ice cream or sorbet would be good with this – a pina colada-inspired dessert!

  9. The restaurant I used to work at always had a flambe on the menu – when pineapple was on them menu it always sold like hotcakes. The servers did use dark rum! We served it with coconut sorbet. p.s. the coconut sorbet had dark rum in it too!

  14. I’ve been totally doing double takes when walking by the pineapples lately, but always think, “Can I really eat a whole pineapple by myself?”

    I bet I could if I caramelized the heck out of it… ;)

    I have so many issues with fresh pineapple (they make my belly hurt!) but maybe if they were flamed, my belly would agree with them more….

  17. I agree about Spring, I mean whatever happened to it? Don’t get me wrong, I love summer, but I like the progression to it just as much. Anyways, these caramelized pineapples are literally jumping off the screen at me – yum!

  27. Last time I flambeed something I thought I lost my eyebrows! But that wouldn’t stop me from doing it again. :-D

    It will be sacrilege to do anything with a properly ripe pineapple, but when it is less than desirable I am all for jazzing it up as much as possible…
