
Smoothies are a good way to start the day, no? Full of vitamin C, full of fruity goodness. Ever seen those huge smoothies from Jamba Juice? Sometimes they are massive, and honestly, they’re just too much. What if you just needed a shot of sunshine to help you start the day? And no, not talking about shots of liquor kids! We’re talking about shots of frozen fruit.
Quick and simple recipe for you guys today. They’re smoothies in the shape of cubes, and they’re quite good. This recipe makes quite a bit, so reduce however you see fit. You can even fill popsicle molds if you like, which we did. And if you’re all about the liquid elixer, forget the frozen method all together. This will make a couple of super dee duper jumbo servings for the smoothie slammer in your life or 6 moderately sized portions. If you go with the liquid method, blend in ice to thin it out.
Pineapple Mango Smoothie Cubes – Approximately 48
2 mangoes, peeled and chopped
1 cup crushed pineapple, with juice
2 cups fat free milk
1/4 teaspoon fresh ginger, cropped
3 tablespoons honey
1. Plop everything into a blender and process until smooth.
2. Carefully spoon liquid into three 1-ounce ice cube trays. Freeze at least 3-4 hours or overnight.

We also have smoothies most days for breakfast — a bit of fruit, some kefir, sometimes a bit of vanilla or cinnamon. Just perfect if you ask me — and another bonus is that we never have to worry over our daily servings of fruit!

Nice idea to frozen the smoothies. The ginger and honey should go very well with mango. I would probably drink the whole batch. Nothing left to freeze. lol.

This got to be my favorite. Just substitute the milk with yogurt and you got an Indian mango lassi!
