Maybe you’ve noticed we love sweet potatoes. Either you’ve noticed it, or you’ve just read the words ‘We love sweet potatoes.’ too many times on this site. We’ll say it loud and proud, ‘We love sweet potatoes!’ A while ago, we were surfing through the site of the oh so Noble Pig, and there was a recipe for Banana-Oatmeal Bake. The short ingredient list resulted in this tray of what appeared to be utter deliciousness. We knew we had to make it. Only one of us is a big banana fan (that’d be Amir), so of course, the original recipe would’ve been enjoyed, but we made a couple of changes that seemed as though they fit everyone’s tastes. That of course included the incorporation of our favorite vegetable–the sweet potato.
This recipe seemed to be very accommodating. You could probably use a wide variety of fruits, but most likely the best substitutes are ones that can be cooked down a bit and mashed or puréed. Of course, we went with a vegetable that is naturally sweet and perfect for mashing, so we got lucky. Just as we felt free to experiment, you should too. The original recipe called for Bob’s Red Mill Hot Cereal and agave nectar, for which we used a raisin, date and nut granola cereal and Trader Joe’s Maple Agave syrup blend respectively. Adding the cinnamon and orange flavors took the whole dish to the moon. We had little sweet tater squares to eat for days! What could be better?
Sweet Potato Squares – 16 squares (adapted from Noble Pig)
2 cups old-fashioned oats
1/2 cup granola cereal
1 teaspoon baking powder
1/4 teaspoon salt
1/4 cup maple agave syrup blend
1 cup fat free milk
1 large sweet potato, cooked and mashed
1 large egg, lightly beaten
1 teaspoon vanilla extract
1/4 cup walnuts, chopped
1/2 teaspoon ground cinnamon
1 tablespoon wheat germ
Zest of 1 orange
Juice of 1/2 orange
1. In a medium bowl, combine oats, granola cereal, baking powder, wheat germ, cinnamon and salt. Set aside.
2. In another bowl, whisk syrup, milk, egg, vanilla extract, orange juice and zest and sweet potatoes. Pour wet ingredients into dry ingredients and mix well.
3. Spray an 8 x 8-inch baking dish with cooking spray and slide in sweet potato mixture. Bake in a preheated oven at 375 degrees for 15 minutes. Toss walnuts on top and bake another 5-8 minutes. Allow to cool at least 10-15 minutes before cutting.
