
There are really great things about waking up in the morning on the weekend: knowing it’s a Saturday or Sunday and you don’t have to go to work, staying in bed past 9:00 am because you can and smelling something baking. Someone once said the best part of waking up was Folgers in your cup, but we think the best part of waking up is arising to the scent of someone cooking in the kitchen. We’ve made biscuits before, but these are purely unadulterated. Eat them plain or add butter, honey or jam. They are most definitely a great way to usher in a good morning.
Short and to the point today! We just want to share an easy biscuit recipe for your next lazy weekend morning. Whoever you serve these to will love you for life. Fast to make and so quickly eaten, you won’t even realize you’ve spent any time in the kitchen!
Buttermilk Biscuits – Approx. 10-12
1 1/4 cups self-rising flour
1 1/2 teaspoons brown sugar
1/4 teaspoon baking soda
1/4 cup shortening
1/2 cup buttermilk
Flour for dusting
1. Combine flour, sugar and baking soda with a whisk.
2. Cut shortening into flour with a pastry blender until small, coarse crumbs develop.
3. Stir in buttermilk until sticky dough forms. Dump on a lightly floured surface and knead 3 or 4 times.
4. Roll out to about 1/2 inch and cut circles with a 2-inch cutter or a drinking glass.
5. Lay dough on ungreased cookie sheet. Bake in a preheated oven at 450 degrees for 8-10 minutes or until golden brown.

Always forget about biscuits in the morning. I like mine with bacon and egg in a sandwich or covered in gravy. So unhealthy and makes you want to run right back into bed and crash in a carb coma for the next couple of hours.
