Roasted Tomatoes and Italian Sausage

Roasted Tomatoes & Italian SausageForget meat and potatoes; we’re feenin’ for meat and tomatoes.  We love a fresh, bright tomato based sauce over al dente noodle strands, but when you toss in your favorite meat, we think it gets just a bit better. Actually, forget the sauce too.  Let’s deconstruct it a bit and stick with the star players.  As with most foods, roasting tomatoes really brings out their sweetness, which is a great way to add a little life to even some of the winter season’s not so spunky red fruits.  Those ‘lil buggers mixed with something as flavorful as, say, Italian sausage will really rock your world.

Freshly roasted tomatoes and sweet and spicy Italian sausage are just enough to satisfy our cravings for a warm, winter dish.  Great over white rice, pasta or maybe even a pile of mashed potatoes.  It can even hold it’s own as the main dish.

Roasted Tomatoes and Italian Sausage – Serves 4 to 6

3 cups cherry and grape tomatoes, mixed
1/2 pound Italian sausage, sliced
3 tablespoons olive oil
2-3 tablespoons balsamic vinegar
6 cloves garlic, peeled
1/2 cup basil, roughly chopped
1/4 cup parsley, chopped
Kosher salt

1.  Toss tomatoes with 2 tablespoons olive oil and 5 whole garlic cloves.  Roast at 400 degrees for approximately 25 minutes or until tomatoes darken and begin to burst.  Remove from oven.

2.  Mince last clove of garlic and cook with remaining olive oil in a pan over medium heat.  Add sausage as garlic sizzles and cook until done.

3.  Add cooked tomatoes and balsamic vinegar to sausage and stir to combine.  Remove from heat.

4.  Top with basil and parsley.
