Another friend of ours recently hit us up to be a guest blogger on the site and take part in our Replicated Recipes feature. Carole is a twenty-something Georgia transplant here in Los Angeles who also loves everything food. We were delighted to have her try out one of our dishes and report back with her experience. As we mentioned with the last Replicated Recipes, it can be a tad nerve-wracking to have someone new cook your recipe and give feedback. It’s not always guaranteed that the outcome will be the same, nor do we know for sure others will even like the taste of the finished product as much as we did. We’re glad to report her remake of the Sun-dried Tomato and Basil Dip was a success.  It even appears others enjoyed it as well (*phew*). Thanks for playing, Carole!

I love dips and I am always looking for ones composed of simple ingredients. This was just the one! I was very curious about this dip and wanted to see how the basil would do as one of the main ingredients. I brought it to a function last Tuesday evening and got rave reviews. People loved the simplicity of flavor. The sun-dried tomatoes made the dip seem almost “fancy”.

While making the dip I tried really hard to follow the amounts given and made sure the chopping was “finely chopped”. After tasting the dip at home, the basil amount seemed to overpower everything else. I added one more sun-dried tomato and this seemed to balance it out more. At the gathering, however, I did receive the same complaint–the basil over powered the dip a bit too much. That was it, though. They loved it over all. I served it with bagel chips and little heirloom tomatoes. I loved it too and my husband and I were happy to have a little left over to eat at home. This was really fun and I look forward to making more of your yummy dishes!

    This dip sounds wonderful with the sun dried tomatoes and would look so pretty with the color popping out. I love the flavor of basil, so this would be perfect for my midnight snack urges.
